White radish pork ribs soup

First of all, I have always thought that the white radish is white carrot... you know why? It's because in Mandarin or in my dialect Hokkien, we normally call it "bai luo pok", which literally translates to white carrot. And so, just before I want to post this blog, I thought to myself, I'd better double check whether the term "white carrot" is correct... And I am glad I did... And so, now I have to correct myself, it is known as white radish, white radish, white radish!

Now on to the recipe of cooking this simple soup of White radish pork ribs soup. Why do I say it is easy? It's because you just throw all the ingredients into a pot of water and then leave it to simmer and boil for about 3-4 hours over low fire. All you need to do is check on it every now and then to make sure that there is actually still soup in the pot and it is not dried out!


Ingredients:

1 White Radish (2 if it is a bit small)
About 300gm of pork ribs (If you do not like to eat pork , you can substitute this with chicken)
1 piece of dried squid
Salt according to taste


Method:

  1. Peel the white radish and cut it up into pieces about 3cm x 3cm.

  2. Wash the dried squid and cut it up into strips about 1 cm wide.

  3. Put the white radish that has been cut, dried squid and the pork ribs (or chicken) into a pot of water. The water should cover all the ingredients and should be enough to simmer for at least 2 hours.
  4. Cook on low fire for at least 2 hours. I normally cook mine for about 3 - 4 hours. After it is cooked, just add a pinch of salt(if needed) according to taste. I normally do not add salt as it is already very nice without salt :)
