Pumpkin porridge for babies
About 20gm of dried anchovies
My daughter is now 8 months old and she has started eating porridge. But as she only have to little teeth, I can't give her any solids yet. Her porridge has really got to be really really pureed. And I got to vary the "flavour" of the porridge to keep it interesting. And the porridge needs to be nutritious too!
And so here is my first recipe on how I cook my daughter's porridge
Ingredients:
About 20gm of dried anchovies
About 3 slices of lean pork (2x3cm)
About 30gm of pumpkin, cut into small slices
About 10gm of rice
Water
Method:
- Put the anchovies into a pot with some water (about 1 cup) and put it to boil. Let it simmer for about 15 minutes over low fire so that the flavour of the anchovies will be "released" into the water.
- Wash the rice and put it into a small ceramic bowl.
- Put in the pork and the pumpkin.
- Add in the anchovies stock.
- Then put the bowl into a pot and steam it for about an hour as shown in the picture below.
If you cook the porridge this way, the texture will be more smooth and aromatic. And you do not need to worry that the porridge will stick to the base of the pot if you do not stir it frequently!
